Friday Night Beet Salad

This recipe was so simple that I'm not even going to include step-by-step photos to guide through the recipe.  Let me know if you really would've appreciated the photos and I'll do that the next time I post a recipe, ok? ;-)  FYI, I named it Friday Night Beet Salad because beets help detoxify the liver and one needs that after a Friday night of happy hours and such.  You're welcome :-)

So since I'm in full-time home parenting mode, I've been cooking up a storm!  Since the heat of summer is upon us, I try not to actually cook but throw fresh things together in a creative way.  This was one of those recipes.  So why even eat these super pigmented, weird veggies? See below:

So now you've waited long enough.  Here's the simple recipe.  Enjoy!  Let me know what you think after you've made it!

RECIPE:

3 ROASTED BEETS (I BOUGHT ORGANIC ALREADY ROASTED)
JUICE OF 1/4 OF A LARGE LEMON
1 TABLESPOON OF EXTRA VIRGIN OLIVE OIL
1/2 CUP CRUMBLED ROCQUEFORT CHEESE (GORGONZOLA WILL DO FINE TOO)
SEA SALT TO TASTE
1 TABLESPOON CRUMBLED WALNUTS TO TOP (I USED SUNFLOWER SEEDS THIS TIME)

CUT THE BEETS INTO 1-2 INCH SQUARE BITS AND SIMPLY MIX IN ALL THE INGREDIENTS EXCEPT NUTS WITH A LARGE SPOON.  I LIKE TO SERVE IT CHILLED, ADDING THE WALNUTS ON TOP RIGHT BEFORE SERVING. ET VOILA! SERVES 4.
